How do I compile vmlinuz-2.6.11 for Zire72?
should I build it as cross compile?

Is there any docs on this issue somewhere?

If you want to build kernel,
checkout source and make palmz72_defconfig.
And yes, you'll need cross-compiler (gcc>=4.0) to build it.
